Not weird. Not wild. Just a lean, mild meat that eats easy — somewhere between chicken and pork.
But this isn’t new.
Alligator’s been on the menu for generations down south — especially in Louisiana, where Cajun cooking turned it into a staple. Fried gator bites, sausage, gumbo… it all started as practical, use-what-you’ve-got cooking and stuck around because it’s actually good.
Fun fact — it was even eaten during Lent in some places, since it was considered closer to fish than red meat.
