Aboriginal Australians traditionally hunted kangaroo as a major food source, using nearly every part of the animal for food, clothing, and tools. Later, early European settlers also relied on kangaroo meat on the Australian frontier before cattle became widespread. Today it’s still popular as a lean, high-protein wild game meat with a rich flavor similar to very lean beef or venison. Unfortunately, koala bears can’t be legally sourced… and apparently everything else in Australia is trying to kill you. 🇦🇺☠️ Cooking tip: kangaroo is extremely lean, so medium-rare is usually best.
